The Ultimate Green Table
for SMG
For SMG Swiss Marketplace Group, I designed and executed a fully immersive sustainability-driven culinary experience for 25 executives. The client’s request: a vegan and sustainable setup.
To kick off the evening, I introduced a large green moss structure hiding bite-sized vegan treats, inviting guests to interact and discover flavors in an unexpected way. This tactile experience set the tone for the night, blending storytelling, nature, and gastronomy into one seamless concept.
The drinks were thoughtfully curated, featuring selected natural wines and cocktails prepared on-site with green touches.
The four-course seasonal vegan menu, crafted in collaboration with Chef Andrea Vailati, reflected a zero-waste philosophy. Vegetables and herbs used in the dishes also became part of the table décor, with moss as the central element, seamlessly integrating nature into the dining experience and creating a visually stunning, edible tablescape. Vintage dishes and cutlery complemented the sustainable concept.
The event received outstanding feedback, successfully delivering a creative, high-impact brand experience aligned with SMG’s sustainability vision
